Sheehan will lead the Warriors' senior football team for a third year.
It will be his second season after this year's Warrnambool and District league competition was abandoned due to COVID-19 concerns.
Toleman spent three seasons as co-coach alongside Meagan Forth before taking on the job in a solo capacity this year.
Old Collegians president Jason Moloney said the re-appointments were a "no-brainer".
"When you have a year like 2020 I think if you can have as much stability as you can get, it's a good thing," he said.
"We wanted to give Nick and Jess the opportunity to actually coach.
"They've done a hell of a lot of work the past year and deserve the opportunity."
Moloney said Sheehan and Toleman "were really good people" who wanted to have a positive influence at the club.
"Anyone who coaches football and netball knows you don't do it for anything other than the love of the game," he said.
The Warriors have been a mainstay in senior football and A grade netball finals in recent seasons.
"You'd love to continue to be successful but it's not the only driver," Moloney said.
"We want to be a good community club, particularly on the back of this year.
"You realise the value of community, family and friends and all those things."
