Winis Imbi, who was an assistant coach under playing-mentor Dan Nicholson this year, will take the reins as the club aims to break its 62-year Hampden league premiership drought.
The 40-year-old replaces Nicholson, who led the side to finals in his two years at helm, after he stepped away from the role at season's end.
Imbi said the Port Fairy community and his family were key drivers in his decision to take on the role.
"My wife (Mel) and I want to help the club on its journey as it has been 60-odd years since they won a flag but they are not easy to win," he said.
"We want to help the community the best we can and strengthen the club so it's in a position to be sustainable for the long term."

The former Portland and North Gambier coach said the decision was a "daunting" one to make.
"It's daunting because the club has expectations and the players are really driven and I want to try and do the best job possible," he said.
"I'm really respectful of the journey that Dan (Nicholson) has taken them on and wanted to come to the club to help Dan with the hope that the club will succeed and now it's about continuing that on."
Club spokesperson Gareth Allen said in Imbi's time as the star midfielder's deputy over the past year he had built a solid rapport with the senior group.
"He brings with him plenty of senior coaching experience and will help implement systems across our football club to take us into the future," he said.
"The club is in a fantastic position after a review of all current structures on and off the field."
Allen said Imbi has the backing of the Seagulls' senior players.
"Imbi began implementing structures last year and created genuine excitement within the group," Allen said.
"The players are all sticking together and committed to help Imbi bring success to the club."
Port Fairy has retained 95 per cent of its 2019 list and is eager to strengthen it further with recruits.
Star players Nicholson, Tom Sullivan, Matt Sully, Kurt Smith, Sandy Robinson and Kaine Mercovich have signalled their commitment to the club.
