John Joshua Waldron pleaded guilty to some theft and dishonesty offences committed while he was working at the Comfort Inn Marina in 2017 and 2018.
One charge, committed in August of 2018, related to the fraud of more than $29,000.
Documents reveal Waldron's alleged theft began in the days after he started work as a food and beverage manager at the company.
Adelaide Magistrates Court heard on Wednesday he used gambling to cope with traumatic situations and is now seeing a psychologist.
But defence lawyers said he had not been honest in a pre-sentencing assessment about previous crimes committed in Queensland, which also funded his habit.
Waldron, who has also pleaded guilty to stealing golf clubs, is yet to enter pleas to several other charges.
His lawyer asked magistrate Elizabeth Sheppard for more time to negotiate with police in the hope of consolidating the remaining counts.
Ms Sheppard continued Waldron's bail to reappear before the court in August.
