UPDATE, Monday, 4.15pm:
An alleged assault victim flown to a Melbourne hospital after an incident outside a Port Fairy hotel is now awake and talking.
A police spokesman said the 25-year-old from Coomoora near Daylesford suffered a bleed on the brain and a facial fracture, but appeared at this stage to be responding well to treatment.
It is believed there were incidents inside and outside the Victoria Hotel in Bank Street, Port Fairy, about midnight on Saturday.
The compliant victim was being escorted from the hotel by a staff member when the 24-year-old Port Fairy man launched a punch to the victim's head, causing the victim to go to ground.
The victim was then escorted outside and asked to sit on a step while a staff member went to get water and administer first aid.
The alleged offender was escorted out another door.
The 24-year-old Port Fairy resident walked away but returned and there was a second incident.
The victim suffered another even more significant blow to the head which is believed to have caused a facial fracture.
He again went to ground, this time hitting his head, which is believed to have caused an 8mm bleed on the brain.
That led to the victim being flown to the Royal Melbourne Hospital in a critical conditions with head injuries after his condition had been stabilised.
He was said at that time to have suffered life-threatening injuries. He is now in a stable condition.
A Port Fairy man was arrested at a nearby address early Sunday and assisted police with their inquiries.
He has been charged with recklessly causing serious injury and will appear in the Warrnambool court for a bail/remand hearing on Tuesday.

Sunday: A Port Fairy man has been arrested following an alleged assault at hotel in Port Fairy early this morning.
The incident, between two men who are believed to be not known to one another, happened near a Bank Street hotel - believed to be the Victoria Hotel - about midnight.
A 25-year-old man was seriously injured during the incident, suffering potential life-threatening heads injuries.
He was airlifted by HEMS4 to a Melbourne hospital.
It is believed the alleged victim is now in a serious but stable condition.
An Ambulance Victoria spokesman said a man in his 20s was airlifted to the Royal Melbourne Hospital in a critical condition with head injuries.
Another 24-year-old man, who initially left the venue, was arrested shortly after at a nearby property.
He is assisting police with their enquiries.
A crime scene has been set up while Warrnambool police crime investigation unit detectives and crime scene officers process the scene.
