Chocolate honeycomb brought to you by Jane Dough pastry chef Will Jane.
Ingredients:
- 35 grams honey
- 65 grams golden syrup
- 37.5 grams sugar
- 14 grams bi-carb soda
- 30 grams milk chocolate melts
Method:
Line a baking tray with some non-stick baking paper.
Weigh up the honey, golden syrup and sugar into a saucepan, in that order.
Place on the stove on a low heat, stirring occasionally until the sugar has all dissolved and the mix has become a liquid.
Increase to a medium heat and cook for two minutes until you get to an amber colour.
Remove the saucepan from the heat, then add the bi-carb and stir in quickly with a wooden spoon.
Immediately pour the mix out onto the tray and spread out into a thin layer.
Allow to cool for about an hour at room temperature, or place in the freezer for about 10 minutes.
Crack into bite sized pieces.
Melt the chocolate in a heatproof bowl in the microwave in 20 second increments, stirring in between.
When the chocolate is melted, dip the honeycomb in the chocolate until it is completely coated, then using a fork, pick up the honeycomb and tap the excess chocolate off.
Place on a piece of non-stick baking paper and allow to set.
