Brulée will perform part of the festival's Sunday morning show, alongside Port Fairy's three piece acapella group Triptych and Beech Forest bluesman Homesick Joe.
The Ballarat-based performer plans to play an eclectic mix of songs from her Leonard Cohen and Tom Waits tribute shows, plus a range of French cabaret and 1920's 'dirty blues' numbers.
"All of these songs all have really beautiful lyrics," Brulée said.
"They are almost pieces of literature and poetry, many of the songs are simple but beautiful."
Brulée said she loved playing to country audiences.
"I would much rather come to the country to do gigs, you get a more mixed group of people who are much more generous and open minded," she said.
"You get a nice mix of people who are always up for a chat, especially about Leonard Cohen. People always have a story about the first time they saw him play."
Festival organiser Brendan Dowd said the Sunday morning performance will be the perfect way to recover from the big shows on Friday and Saturday night.

"People will be able to wind down and chill out at the church stage," Dowd said.
"Friday night we have the incredible show of Shane Howard and John Schumann, with support from Flynn Gurry, in the church from 7pm.
"Music will kick off at 2pm on Saturday in the Crossley Hall with a range of performers including Brett Clarke, the Lady Bugs, the Devil Women from Mars, Lee 'Sonny Boy' Morgan, Black Swan and the Hogstompin' Zydergators."
Dowd said the grassroots festival was designed to be a smaller, boutique festival open to a range of different musical styles.
"We want the festival to be comfortable and friendly and to maintain a laid back country vibe.
"It will be a diverse experience, with lots of family friendly activities including workshops from Rhythm Street Music."
"There is also an opportunity for people to visit surrounding towns given the Saturday show doesn't start until 2pm.
"We want to promote the region and help open people's eyes up to all of the local attractions."
Amie Brulée will perform at the St Brigid's Blues and Roots Festival from 12pm on Sunday January 19.
Three-day passes, weekend passes and single day tickets are available through TryBooking. Some tickets may be available at the gate.
