Ambulance Victoria's Jo O-Connor-Ward said the 65-year-old man collapsed shortly before noon and lost consciousness.
The man was visiting Warrnambool for the event.
"Bystanders have witnessed the man collapse and have started CPR immediately," Ms O'Connor-Ward said.
An automated external defibrillator (AED) kept on-site at the Warrnambool racecourse was then used to revive the man.
"He was treated further by the Wilson medial team and on scene first aid officers," Ms O'Connor-Ward said.
She said the response by bystanders had saved the man's life and encouraged other people to help out if they witness someone collapsing.
"This highlights the importance of bystander CPR and the presence of the AED."
She commended the efforts of the bystanders.
An Ambulance Victoria spokeswoman said the man was airlifted to the Geelong hospital where he is in a stable condition.
