Lacey Moore, 19, of Queen Street, Framlingham, appeared in Warrnambool Magistrates Court charged with driving in a manner dangerous.
On October 8, Moore was driving a white Holden utility north on Mortlake Road at Bushfield.
Police said Moore didn't realise a Hilux utility also traveling north had slowed down in front of her to turn right.
She veered onto the wrong side of the road, side swiping the Hilux and colliding with an oncoming TNT truck.
She told the court she didn't have time to stop for the Hilux and made the split-second decision to veer onto the wrong side of the road, colliding with an oncoming TNT truck.
She said she traveled on Bushfield's Mortlake Road every single day and had never needed to stop for a turning vehicle on that stretch of road.
She told the court she must have been "off with the fairies".
Police said Moore denied eating behind the wheel, despite a hamburger found wedged in the vehicle's windscreen, which was covered in mustard.
Magistrate Franz Holzer said Moore was lucky to be alive.
"You're 19. You've got the world at your feet, you need to make sure you're alive," he said.
Moore suffered serious injuries in the collision, including a broken back.
She told the court her injuries meant she could no longer work as a chef and that she had to find a new career.
Moore was placed on a 12-month adjourned undertaking, ordered to do a safe driving course and her licence was disqualified for six months.
