The television star will hand-pick items grown by local producers that take his fancy and cook them using just hotplates.
He likened it to television program Ready Steady Cook and said what he will cook is even a mystery to him. "I'm expecting some wonderful mozzarella, wonderful beef because of the (south-west's) dairy connection and with the waters around here I'm sure there'll be some lobster or abalone, those type of things," he said.
"I've been told there's some fantastic dairy foods there and people are passionate about what they're producing."
Harriott said he wanted to use ingredients that people weren't as familiar with and take them on a journey.
"I want to be able to walk into a market and pick up a few ingredients here and there and cook it live at the market. I haven't got an oven, just a couple of hotplates and rings and it's all going to happen there.
"It's going to come alive and I'm going to share it with the people, and show people they can create simple fare at home without that much preparation, but more importantly using fresh produce."
Harriott is in Warrnambool, only one of six Australian locations chosen, to feature in his television program Ainsley's Market Menu which will debut on SBS later this year and will be broadcast in up to 130 countries worldwide.
Harriott will also visit Lana’s Garden in Warrnambool and the Yumbah Aquaculture abalone facility at Narrawong to create additional segments for his show while visiting the region.
The Fresh Market Warrnambool is on in Pertobe Road on Sunday and runs from 7.30am until 2pm.
