And Warrnambool’s Mark Healey, a Speedway canteen volunteer, had the art of industrial sandwich-making down to a science.
Mr Healey placed the base of nine sandwiches out in a line and, with clinical efficiency, went about spreading margarine over each one before adding the chicken and lettuce mix and starting again.
He said you get 9.5 sandwiches from each loaf of bread.
And with 110 loaves used over the 47th South West Conveyancing Grand Annual Sprintcar Classic weekend, Mr Healey pumped out approximately 1,050 sandwiches, along with 200 salad rolls.
At $4.5 a sandwich and $7 a salad roll, this means Mr Healey and his team made over $6000 worth of lunch for the sprintcar fans, himself being one of them.
“I love the speedway – that's why I'm here,” he said.
“My girlfriend at the time, who is now my wife, first brought me to the speedway in 1984 and I fell in love with it straight away.
“In other racing you can only see them as they come past, but in oval track racing you can watch your guy go round the whole time...you don't lose him when the track disappears. To me, that's the best part.”
And for Mr Healey, the Speedway has been a family affair since day one.
“My eldest was nine months when she first came along,” he said.
“It was the first race of the season after she was born and we've been coming ever since, except for the youngest – she hates the noise.
“The first time I volunteered, about 18 years ago, I made ten loaves of sandwiches for the weekend. And now we’re doing 30 to 40 a day, so we obviously had to upgrade our set-up.”
