Detective Senior Constable Richard Hughes, of the Warrnambool CIU, said police believed a number of people were involved in the burglary at King Cole Direct Fruit Supply in Cooper Street.
“There has to be a number of people involved due to the sheer volume of the safe,” Detective Senior Constable Hughes said.
“No doubt a vehicle has been used because of the weight.”
He said the incident occurred in the early hours of Wednesday morning.
The safe was stolen from a brick building which is used as a tea room at the front of the premises.
Detective Senior Constable Hughes said the offenders cut a cyclone fence on the north-west corner of the property and forced their way through a door.
"It's highly probable someone knew it was there and specifically targeted it.
“They have gained entry and selectively targeted a building that contained the safe,” Detective Senior Constable Hughes said.
“They have not touched or disturbed other areas of the building.”
King Cole Direct Fruit Supply owner Tony Serra said he was devastated.
Mr Serra appealed for anyone with information or who saw anything suspicious, no matter how small it seemed, to report it to police to help find the persons responsible.
Detective Senior Constable Hughes said Warrnambool crime scene members were onsite and a crime scene had been established.
Anyone with information is urged to contact Warrnambool police on 5560 1333 or Crime Stoppers on 1800 333 000.
