Full job description

We are currently seeking a highly experienced and committed Sous Chef to join our team in Moura to assist the head chef and chef staff in the production and delivery of food service, including routine meals and dining functions. The SousChef will work across a 14/7days roster. 

 
Responsibilities 

  • Manage the overall preparation and delivery of meal services from production facilities, ensuring regular consultation with the Village management and site workers regarding expectations and performance
  • Train all food production personnel in relevant procedures and methods relating to food preparation and presentation, including those specific to religious meal service such as Kosher and Halal   
  • Coordinate surge and emergency contingencies by assisting in the mobilisation of staff, equipment and facilities in accordance with requirements as they change from time to time   
  • Support and participate in the implementation and management of the Food Safety Program. This involves actively identifying hazards, employing appropriate controls, recording incidents in line with Company standards, and ensuring team members receive appropriate training and instruction   
  • Preventative management of food safety hazards through the systematic application of HACCP controls   
  • Overall stock management, including ordering of supplies, stock rotation, application of labels and dates, correct storage and handling, develop inventory control measures, ensure correct wastage practices and coordinate stock takes   
  • Ensure all areas of the kitchen are clean, sanitised, well-maintained and presentable
  • Review customer comments and feedback daily, ensuring concerns are investigated in a timely manner and corrective actions introduced where necessary   

 
Experiences & Qualifications 

  • Minimum 3 years’ experience managing large commercial kitchens 
  • Australian recognised Commercial Cookery qualification  
  • HACCP Level 3 certification  
  • Sound knowledge of Food Safety Standards, relevant legislation and statutory obligations  
  • Solid understanding of contract management, quality management systems and continuous improvement principles 
  • Strong planning and organisation skills and proven experience in collaborative and consultative processes at a professional level  
  • Lead teams and encourage development and growth  
  • Fully Vaccinated against Covid-19 (Vaccination Certificate or Medical Exemption
