While rocky road remains Audley & Hall’s best selling bar, owner and artisan Andrew Hall says he’ll keep creating new flavours (like chocolate-coated wasabi peas) at his Port Fairy chocolate dessert shop. The UK-born chef who worked at Dunkeld’s Royal Mail Hotel for almost four years is committed to tempting chocolate lovers into his new retail space. Together with wife Alice and three young children, he is relishing his decision to settle in the port town.

What do you most love about living in Port Fairy? It's a quaint little town with a lot to offer.
Describe Port Fairy in five words. Unique, friendly, picturesque, quaint, community.
If you could live anywhere where would you choose? Other than here probably the Rocky Mountains in Canada.
How do you immerse yourself in the community? I joined the local cricket club and men's group.
What are you reading at the moment? Steve Jobs by Walter Isaacson.
If you had a million dollars what would you do with it? See wife for answer.
What career did you want to pursue when you were a teenager? A chef or doing something in movies like special effects or prop design.
What would your ideal Sunday involve? Going out for brunch, reading the paper in peace, going for a drive with the kids in the afternoon, followed by kids going to bed without a fight, and sitting on the couch enjoying the rest of the evening.
What is something people might not know about you? I would rather eat cheese than cheese cake.
If you could choose to go back 100 years or forward 100 years what would you do and why? I’d go forward to see if we learned from our mistakes and to see if Richmond can win a grand final in my life time.
What recipe are you renowned for cooking for family or friends? A northern (English) dish called sausage panackelty – it’s been a crowd-pleaser for five generations.
If you had all the time in the world to pursue and perfect any hobby what would it be? I’d like to play the drums.
What is the best piece of advice you've been given? If you wouldn’t serve it to your mum do not send it out.
Where do you see yourself in 20 years? Hopefully still doing something I enjoy.
