Daniel Robert Petrolo, 40, has indicated he will plead not guilty to the charges in the Warrnambool Magistrates Court.
Police prosecutor Senior Constable Kevin Mullins said there were a number of problems with witnesses.
He said police only learnt on Friday a key witnesses required an Italian interpreter to assist her in court, another witness had failed to appear at court on Tuesday and a third witness now suffered dementia.
Police successfully requested the contested hearing be adjourned until February 7.
It is expected that additional medical material may also be available at that hearing.
Mr Petrolo has been charged in relation to three police briefs of evidence with charges including recklessly causing serious injury and intentionally causing injury.
He has been in custody for about a month after being arrested.
In a separate case, a Terang father has been remanded in custody until next month after being charged with serious family violence offences.
Jason Atkinson, 31, of Swanston Street, was refused bail in Warrnambool court and remanded in custody until February 6.
He has been charged with intentionally causing injury, breaching an intervention order, committing an offence while on bail, unlawful assault and two counts of assaulting police.
Mr Atkinson told the court he was very upset about being arrested and held in custody.
He said he just wanted to go home but indicated he was at risk of self-harm and had lost everything.
Mr Atkinson said a series of recent events had turned his life upside-down.
