But for the 19-year-old from Warrnambool, it is a career that had far from glamorous beginnings.
“I started washing dishes at the Flying Horse, my first shift was New Years Eve 2013 and we did over 500 meals,” Mr Carroll said.
“It was a tough start but I went from there to a kitchen hand, to doing some preparation work and then I was offered the apprenticeship.”
That offer came from Flying Horse chef Peter Inverarity.
It was an inspired choice, Mr Carroll grabbing the chance with both hands.
“This is my second year and I love it,” Mr Carroll said.
“I feel like I am improving all the time and it is a good challenge.”
Mr Carroll will be back to compete in the South West Apprentice Chef Challenge on August 14 at TAFE. He was runner-up last year and will again be up against Rebecca Harris, the winner from 2015.
