Mr Paulon, 25, was riding to work at a restaurant in Lygon Street, Carlton, on Friday afternoon with his fiance Cristina Canedda.
A motorist parked on Sydney Road opened their door in front of him.
Mr Paulon hit the door and was thrown under a truck driving next to him.
Mr Paulon had worked at Lygon Street restaurant Donnini's for some time, and recently returned to Australia under a sponsorship agreement with the restaurant.
His grieving family arrived in Australia on Sunday.
The restaurant's owner, Marco Donnini, said that Mr Paulon was "a generous soul who loved his darling Cristina".
He said the family was shattered, but were "very strong people and they are coping with it admirably".
Ms Canedda also worked at the Lygon Street restaurant, and the pair had planned to settle permanently in Australia.
A note that appears to have been left by Ms Canedda at a memorial that has been created to Mr Paulon reads: "I will do everything to realise our dream, for you".
The cycling event in Mr Paulon's honour is planned for Friday afternoon, and will travel from the southern end of Sydney Road, Brunswick, and travel north to Moreland Road in the suburb.
The event has been organised by Edward Hore, from the group Australian Cycle Alliance. He said it was terrible it took tragedies such as this to raise awareness of how vulnerable cyclists were.
"My son and I were recently car doored and I had a bus next to me and I almost went under the bus," he said.
"But the best way to get information out is unfortunately to utilise these terrible circumstances and try to turn this dreadful negative into a positive. We need to do something about it."
Mr Hore said Ms Canedda or Mr Paulon's housemate would talk before the ride on Saturday.
