Veolia Environmental Services (Australia) Pty Ltd and Visy Paper Pty Ltd have also been charged over the incident in Mill Park in March last year.
Lawyers for the companies appeared on Wednesday in Melbourne Magistrates Court at a filing hearing of a charge of failing to ensure that persons other than employees were not exposed to risks to health and safety.
Prosecutor Anthony McQuire, for the Victorian WorkCover Authority's enforcement group, told the court the defendants were charged last month.
Magistrate Gerard Lethbridge adjourned the case for a committal mention hearing in December.
Fairfax Media reported at the time that the man, 86, and his wife, 83, were walking in the car park when struck by a large dump bin that a truck was lowering.
It was reported the couple were taken to hospital with head injuries and that the man died later.
