The 30-year-old outsprinted Horsham's Mark O'Brien - who recovered from a punctured rear tyre near Allansford - to add his name to the coveted honour roll.
Pollock clocked in at seven hours, 49 minutes and 40 seconds - a relatively slow time due to the tough conditions.
He was naturally thrilled after the 262-kilometre race.
"It's the best win of my life," he said.
"You always dream of this race and coming down that straight and winning."
Tasmanian Thomas Robinson finished third.
